I serve these cookies with pomegranates because red pomegranate seeds and dark chocolate are a beautiful team, both in taste and in nutrition!
(makes 10-15 cookies depending on size)
1 ½ cups ground walnuts
½ cup ground chia seeds
½ cup cocoa powder
10 soft medjool dates, pitted
Ground walnuts in a blender until they form a nice, even powder. Remove them from the blender and place them in a large bowl. Use ground chia seeds (or grind your own in the blender) and add them to the bowl with the walnuts. Measure out the cocoa powder and add them to the bowl as well. In the microwave, heat the medjool dates (make sure they are pitted first!) with 1 cup of water in a medium sized bowl for 30 seconds. This is to ensure that the dates are warm and soft for mixing with the other ingredients. Once heated, remove the dates from the water and clean your hands well. This is important because you are going to mix the ingredients with your very clean hands (I’m sure you could use a food processor, but I haven’t tried this yet). Mix the ingredients as if you are preparing a bread dough- continue to kneed the ingredients until they form a nice big ball.
Now you are ready to form the shape of the cookies! If you have cookie cutters, pick a shape and get creative. You can also form these into disks or small balls or whatever you want. It’s totally up to you. I made them into stars because they look oh so pretty that way. Once you’ve formed the shape of your cookies you are ready to eat them and feel good that your sweet tooth was satisfied all while you got important omega-3 fatty acids too (walnuts contain loads of omega-3s). Cookie making accomplished!
