photo-e1362428609853Warning: These ooey gooey brownies are incredibly easy to eat and one bite may result in more bites and even more until you’ve taken more bites than initially intended.

This recipe is not only fantastic because these brownies are creamy and ooey gooey good, but because there is avocado in this recipe! Talk about one tasty source of healthy fats.  This recipe is actually a super tasty way to get your daily dose of healthy fats because it contains avocados and flaxseeds. Flaxseeds contain important omega-3 fatty acids that your brain requires to function properly, so eat these brownies and your brain will thank you. And rest assure, your taste buds will be satisfied too!

Ingredients (makes 12-16 ooey gooey brownies):

1 (15 oz) can black beans (I use Eden brand because cans are BPA free)
2 ripe bananas + 1 more to create banana chunks (3rd banana optional)
1/2 cup ground flaxseeds
1 ripe avocado
1/2 cup distilled water
1 cup medjool dates (pitted)
3/4 cup whole-wheat flour*
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon vanilla extract
1/2 cup cocoa powder
small handful vegan dark chocolate chips (optional)

Directions:

1) Preheat oven to 375°F. Place black beans, avocado, 2 bananas, pitted dates, flaxseeds, cocoa powder and vanilla extract in a high power blender or vita-mix and blend until smooth. Make sure you’ve got a sturdy high-powered blender on your side, because a little wimpy blender is not going to cooperate with you and you will get angry and frustrated with your wimpy blender.

2) Place this thoroughly blended mixture into a large bowl and set aside. You may be tempted to eat spoonfuls of your blended vita-mix mixture and this may be unavoidable. I can speak from experience. As long as you only eat a few spoonfuls, this should not affect the final product.

3) In a separate bowl, mix flour, baking soda and baking powder. Combine both mixtures and mix thoroughly. Cut up the third banana in small pieces and add the banana pieces into the mixture as to create chunks of banana in the final brownies (this is optional). Add chocolate chips and stir until they are mixed into the batter completely.

Spread onto a lightly-greased or parchment-lined glass baking dish. Bake for 30-35 minutes, or until a toothpick inserted in the brownies comes out clean.

*I used whole-wheat flour to make these brownies, but oat flour or another gluten-free flour should work just as well for those who avoid gluten.

    When something says Ooey-gooey, you know it’s gog to be good. Although, that barely looks like a brownie! It’s like fudge meets cake and a brownie interferes in the relationship.

      Hi Ashley, I am sorry your vitamix was giving you trouble! I didn’t soak the dates ahead of time, but this is an excellent solution to your trouble blending with the vitamin and shouldn’t affect the outcome of the recipe :)

    I am highly allergic to bananas. Is there something I can substitute for them in this recipe? Bananas are used a lot in healthier recipes….understandably….but I can’t even handle the smell of them. I’m just starting out so any help would be greatly appreciated :D

    Hi Talia–thanks so much for this recipe! It’s in the oven right now, and it’ll be ready for when my kids come home from school. I just wanted to point out something about recipes: the ingredients are usually listed in the order they are used. If you would organize the recipe that way, it would make it easier for me to follow; I tend to be a scatter brain. Also, in the instructions, you don’t mention when to add the water. I just assumed I should add it to the vitamix before turning it on, and I’m pretty sure that worked. Anyway, keep these recipes coming. I can’t wait to share these with my kids, and I’m looking forward to exploring your site further!

      Hi Gigi, I think maybe almond flour + oat flour would be the best idea. Almond flour by itself could leave you with a brownie that is too dense/is even gooeyer that the original recipe! Let me know what happens if you make these with almond flour!

    I made these for me and my son tonight. I’m no baker, but they were fun and easy. I also added about an extra 1/4 of water and cooked them in a 8×8 glass dish. They were pretty thick and had to cook for about 45 minutes. I’m thinking 11×8 might be better. My son chowed them down, and I let him eat all he wanted. He had no idea what was actually in them. Made me happy :)

As far as your recipes, I wonder if whenever baking powder is an ingredient, you’d consider listing it as “sodium free” baking powder. I buy this @ Whole Foods. When I became a nutritarian, I was stunned by how much sodium is where we might not expect it to be. Regular baking powder is very high in sodium. Thanks again for your efforts! Kim

    Thanks for this recipe! My first batch is in the oven! I had to use my food processor because my blender wouldn’t take the thickness. I just let the processor go until the batter was creamy. You’re right, the batter is good. My kids weren’t convinced…But they are leary of my healthy cooking… So we’ll see what they say when the brownies are out of the oven! Again, thanks! =)

    Thanks for a beautiful recipe! Can’t wait to try. I have been trying to figure out what the Fuhrman take on Coconut Flour is?…I’ve just started hearing of that as a go to flour substitution when aiming for grain-free. I know what the take on Coconut oil is, (that it is a saturated unhealthful fat, as I’ve read the blogpost on the DP site) but wondering about coconut flour… I don’t know if this is the place to ask but I’d super appreciate it if you do respond!

      Hi Liz, coconut flour is perfectly a-okay! As with Fuhrman approved grains such as oats and quinoa, coconut flour isn’t as high in nutrients as vegetables, beans or nuts (obviously), so just make sure to balance out your diet with plenty of colorful vegetables, fruits and other plant foods and to only have one (or two!) servings of these brownies (or another cookie or muffin recipe) each day.

    do you have any recommendations for cutting down on or replacing the dates? Seems like too much sugar to me. I fear trying to replace them because it seems that perhaps the consistency will be affected. What are your thoughts?

      Hi Denise, you can try replacing some of the dates with Stevia or perhaps more bananas or you can simply use less dates and your brownies will come out less sweet. I hope this helps!

      Hey Dee, hmmm I haven’t tried mixing the wet ingredients in a food processor for this recipe, but I think it could work if you don’t own a blender. The wet ingredients won’t be completely smooth/your brownies will be a tad chunkier, but you could try it and I think you will still have some very delicious brownies on your hands. (: Let me know what happens if you do!

I am JUST Shocked ABOUT Ashley’d Vitamix.. had mine for 11 years and it hasn’t met anything that it can’t handle.. I’ll be back once this is made later this week..     Yes these were very ooey and gooey, my vitamix mixed up everything very well, but I think I will add some sugar to the dry mix. I didn’t find them sweet enough. Maybe my bananas weren’t ripe enough. But a very good recipe indeed.

    These are very tasty brownies! Next time I’ll add cinnamon & some chopped nuts.

    Step 1 needs to include the addition of the 1/2 c. of water in the blender.

    I used a 13″ x 9″ glass dish, but still had to bake longer than 35 mins. to get them done inside.

    Hello,
    These are in the oven, but I had quite a lot of trouble. Water is listed in the ingredient list, but not the directions. I guessed it went in the blender. Are the black beans drained and rinsed or do you include that liquid? It also stopped my new vitamix cold…well hot. Then the batter was so warm it melted my chocolate chips! I used a 9×13 dish, but I’m wondering if an 8×8 would have been better. What do you recommend?

    Just made these and they were good – a depth of taste that was really satisfying, unlike more conventional recipes. Heeded the warning about wimpy blenders and used a food processor instead, which did the job perfectly.

    Looking forward to trying these as I have had no luck with other black bean recipes, they never cook through for me.

    But – is it 1/2 cup flaxseeds that are then ground or is it 1/2 cup of already ground flax seeds.

    And I agree with the person who suggested listing the ingredients in the order they are used – that is traditional in recipes.
