This recipe is incredibly simply, yet uber creamy and delicious! It is the most perfect combination of Tahitian vanilla, tropical coconut cream & pink pitaya fruit.

If you live far away from the tropics, preparing this recipe will bring a little bit of the tropics directly to you! Preparing it may not only result in a fun new recipe, but daydreams of warmer weather and the beach.

This quinoa pudding is my most tropical recipe yet and it is melt in your mouth delicious. It will be sure to satisfy your sweet tooth GUILT-FREE!

And watch out, even though this recipe is pretty-n-pink, be on the lookout for lurking hungry males. Simply because this dessert is pink and looks very girlie does not mean that males are immune to its scrumptious taste. You may end up with no pudding left (cough cough me cough cough) if you leave a bowl sitting unguarded on your kitchen counter top, nearby persons may find themselves consuming one spoonful, which will likely turn into another after another, regardless of gender. If you intend to eat this yourself, make sure to keep an eye out for potential sneaky vanilla coconut quinoa pudding lovers. Consumption of this recipe is almost guaranteed by anyone who has just come back from the gym. I am speaking from experience when I say that this recipe has the potential to get consumed very quickly. Thank heavens it makes 4-6 servings. All pudding was not lost in my case! May you and whomever you prepare this recipe for enjoy it as much as me and that sneaky post-gym going individual lurking in my kitchen did.

Ingredients (makes 4-6 servings):

1 cup white quinoa, rinsed
½ Pitaya Plus pack, defrosted (if you don’t have pitaya, use 1/2 cup frozen berries of choice!)
1 cup coconut milk beverage
¼ cup coconut butter (or raw macadamia nut or cashew butter)
1/2 cup date sugar
1 teaspoon raw natural ground Tahitian vanilla (or 1 teaspoon vanilla extract)


1) Cook quinoa according to package instructions until it is soft and fluffy. The softer and fluffier the better!
2) Combine the rest of the ingredients in a high-powered blender and blend until smooth and creamy. In a large bowl, mix cooked quinoa and pink coconut cream vanilla mixture. Spoon into bowls and store any leftovers in the refrigerator. Top with your favorite fresh fruit or other tasty toppings (I topped mine with fresh blackberries, pomegranate seeds and cacao nibs). Enjoy!

I wrote that phrase a little while ago in my diary and I wanted to share it with all of you. It’s something I wrote when I was feeling inspired by new ideas, yet a bit doubtful about my capabilities to accomplish everything I want to do. Most of us have doubts and questions every now and then, but we can overcome them by doing a bit of uplifting self-talk. If you are ever experiencing doubts about your abilities or goals, remember that you will never know until you try! Often you will impress yourself with what you are actually able to accomplish if you simply take actions to accomplish whatever you desire without letting negative emotions get in your way. Squashing self-doubt will build your confidence to new heights! And when you let doubts and/or insecurities roll off of you and you welcome increasing confidence and empowerment into your life, you will experience more joy and happiness. With one life to live, you owe it to yourself to make each day as beautiful and fun as possible. Self doubt serve no role in this beautiful life goal!
